Since 90% got dairy cow but only 30% got Texas Longhorn, it looks like "cattle" is not generic either.

The term cattle actually works for Texas Longhorn but not for Cow. In my experience Cattle refers to cows who are being raised for meat and hide. Cattle generally doesn't refer to dairy cows.

Cougar, mountain lion, puma, etc. should work for the Florida panther, as that is literally what the species is called by the rest of the world.
