Do Americans learn this kind of stuff in school? I consider myself a well-educated European, and I have no idea about this.

I learned a few of these in high school biology. I know most of them now because I'm a Biochemistry major in college. Ask your average Joe about this though and they'll probably get 0. Even scientists who aren't in Biology/Biochemistry probably wouldn't get that many.
