It looks like Great Basin, Arches, and Capitol Reef are all closer to Salt Lake City than Canyonlands is.

Right you are. I fully intended to set the answer as Capitol Reef, which is significantly closer than any of the other three.

Las Vegas appears to be much closer to Death Valley than to Grand Canyon.

This one is close, and depends on where you are measuring "las vegas" to be. I did measurements from wherever Wikipedia considers the center of the city to be. From this point, Grand Canyon is 61.95 miles away, and Death Valley is 67.07 miles.
