If, for example, the Jets were to beat the Denver Broncos, who are heavily favored, that would be an upset. Its a veryyyyyy common sports term.

do you mean the letter ipsilon which is called a Greek i in French, written as a capital Y in Greek and a u in lowercase and therefore also spelled upsilon?

But a revolt is an uprising, not an uprise. However, if you were using it as a verb, uprising could work.
