I managed to make some progress staring at a screenshot of the challenge on the train the other day, but with your clue confirming that each 4-letter group describes a single country, I think I now have the solution. Each of the 4 letters in each group stand for a piece of information about a country: from left to right, its name, capital, highest point, and longest river. So PIKI is Pakistan, Islamabad, K2, Indus. Similarly, the other groups of letters stand for France, Malaysia, Argentina, Ireland, Canada and the United Kingdom. The only country that has its capital starting with B and highest point starting with Z is Germany (Berlin and Zugspitze, respectively). So the missing letters are G and R, to stand for Germany and the Rhine, with the complete last group being "GBZR".

No PotatoBoy, not really. I first made a list of about 50 countries and then chose 7 that were not too obscure and yet varied in location. Then I added Germany as the main answer as there are 26 capitals beginning with B and then the Highest point in Germany Z, I thought that would give the solver a little investigation to match a B with a Z and come up with G........ R. ......... just as Steve managed.

Thanks! Also, it's cool to hear how you actually develop these challenges, Malbaby, thanks for sharing your method. I did suspect you chose B because of how many capitals start with that letter.
