It appears to me that the UK split Zanzibar from Oman in the mid 19th-century. If Oman were truly sovereign, why did it let another country do that?

They were both under Said bin Sultan, when he died one of his kids became the Sultan of Muscat and Oman, the other became Sultan of Zanzibar. Regardless, the UK had power because they were all British Protectorates at the time.
