Start with Chile.. Then guess its southernmost neighbour (by point on land). Then guess the southernmost neighbor of that country, etc... When you reach a dead end, go back and choose the next southernmost-neighbor. Finally, when you're done with continents continue onto the islands.
Overseas territories don't count, but overseas regions do.
Islands in the South China Sea are a mess. I used https://en.wikipedia.org/wiki/List_of_countries_by_southernmost_point for the data, please let me know if any information seems wrong.
China is before Myanmar because of some disputed island claims in the South China Sea. I chose to include them however because many of them have permanent military installations.

Never known the Netherlands Islands were considered regions not territories. That being said should islands of mainland countries even count, especially if disputed or the only country inhabiting the island? Seems counterintuitive to count those but then not go through no border island countries from south to north too...
It seems right. You have correctly only included the islands China has control over, and not the other claimed islands, that would haver put China before India.
Great quiz! Yeah, the China disputed islands got me hung up for a bit. I might put a note indicating that you're counting those. Your notes do explicitly indicate you would count Bonaire (I got hung up briefly on the Germany->Netherlands thing, too), but that you wouldn't count Gibraltar or Sint Maarten, so you're good on those.
